coco-melon pops

it's summer. it's hot. it's time to cool off a little. how about some home made popsicles? what's the most refreshingest fruit? watermelon, of course! i found the recipe at homespun with love, and it's really easy. but i guess most fruit popsicles are. i think i like these because they have the watermelon taste, but are also a little rich and creamy because of the coconut milk. and doesn't tasting coconut milk always make your mouth feel like it's gone on a little vacation? or maybe that's just me. i used a zoku popsicle maker, and ended up with 22 popsicles total. 



watermelon coconut popsicles

1 mini watermelon (i used <1/4 of a large watermelon)
1 can of coconut milk
1/3 c agave nectar


blend all the ingredients in a blender, pour into popsicle molds and freeze.
